7-step method
01

Preheat the oven, prepare the apple

Preheat the oven to 190°C. Peel the apples and slice them thinly; It should not be too thick so that the inside will cook evenly.

02

Mix the filling

Mix the apples with sugar, flour, cinnamon, nutmeg and lemon zest in a large bowl. The flour collects the juice from the apple; In this way, the filling becomes more balanced.

03

Knead the dough

Mix flour and salt. Add cold butter and shortening and rub with your fingertips until it resembles sand. Add cold water little by little and gather the dough; Do not knead too much so that it does not harden.

04

Open the base and place it in the mold

Roll out half of the dough on a lightly floured counter. Put it in the pie mold, let it overflow the edges a little.

05

Fill the filling

Transfer the apple mixture into the base. Sprinkle the cubed butter on top.

06

Close the top dough and ventilate

Roll out the remaining dough and cover it. Seal the edges by pressing them. Make a few small cuts on the top to let the steam escape.

07

Bake and let it rest

Bake for 55 minutes, until golden brown. Once you get out, let it rest for at least 20 minutes; so that the inside does not fall apart while slicing.
