Step-by-Step Method

7-step method
01

Preheat and season

Heat the oven to 325°F (160°C). Pat the roast dry, then season all over with salt and pepper.

02

Sear the roast

In a large heavy pot or oven-safe Dutch oven, heat the butter and shortening/oil. Brown the roast on all sides, about 8–10 minutes total.

03

Soften the onions

Add the onions and cook for 2–3 minutes, scraping up any browned bits from the bottom.

04

Mix the braising liquid

Stir together apple juice, mustard, ketchup, thyme, and basil. Add lemon juice and the apple, then pour into the pot.

05

Slow-bake

Cover tightly with a lid (or foil). Bake for 2 1/2 hours, then check that the meat is starting to turn tender.

06

Add sweet potatoes

Nestle the sweet potatoes around the roast. Cover again and bake 30–45 minutes more, until the beef and potatoes are tender.

07

Rest and serve

Let the roast rest 10 minutes, then slice against the grain. Spoon the apple-pan sauce over the top and finish with parsley.
