Baby Corn: Cultivation and Use
Baby corn is a vegetable that is the young and not yet fully matured version of corn. This small-sized corn is popular for its crunchy texture and mild flavor. It can be used in a variety of dishes such as stir-fry, soup, casseroles and stews, and can even be consumed raw or fried as a snack.
Baby corn is usually obtained from sweet corn varieties. These corns are harvested a few days after the silks come off the cob. This early harvest allows corn to be consumed in its immature, soft and delicious state. Jim Myers, professor of horticulture at Oregon State University, notes that baby corn is harvested before sugar accumulation and therefore has less of the characteristic flavor of sweet corn.
In the United States and some other countries, baby corn is often sold preserved in jars. Fresh baby corn is harder to find because this vegetable is grown exclusively in Thailand and is costly because it must be harvested manually. Fresh baby corn may have a different flavor when canned. However, when used fresh, it provides a more crunchy and delicious experience.
If you want to grow baby corn in your own garden, it is a relatively easy process. There is no need for pollination and you can get more ears per plant by keeping a distance of approximately 50cm between plants. Myers recommends growing sweet corn varieties and allowing the first ears to mature while harvesting the second ears as baby corn. This way, you can use your limited garden resources in the most efficient way.
Baby corn offers variety and innovation in cooking. It can be added to stir-fries, soups and stews, or even grilled to create a different presentation. Baby corn has gained a valuable place in the kitchen with both its taste and nutritional value.
